Non-Celiac Gluten/Wheat Sensitivity

NCGWS is the catch-all term for the fact that gluten and/or wheat is causing disruption in the body. NCGWS simply means the characteristic trait of late stage celiac disease (villous atrophy (severe mucosal injury)) has not happened yet.
Some cases of NCGWS may progress into celiac disease.

The reason Acumen exists is to help identify what type of disruption is happening AND to help you successfully heal before villous atrophy occurs.

For example, wheat proteins cause inflammation (and side effects like migraines), but the carbohydrates in wheat are responsible for symptoms like bloating, gas, constipation or diarrhea. Knowing which you're struggling with can help you to get healthy faster.



Every body has some degree of an immune and inflammation reaction to wheat because it is one of very few foods that cannot be completely broken down and molecularly looks similar to pathogens, which the body then attacks.

The inflammation caused by wheat creates varying degrees of leaky gut (intestinal permeability) and this allows wheat peptides and other macromolecules to go through the gut and into the bloodstream (when they shouldn't). This is how some food sensitivities form — food molecules that shouldn't be in the bloodstream are, so the body attacks them.
